Today is Midsummer's Eve over here! We're heading over to some friends to celebrate a little bit later. I'm bringing a couple of hostess gifts, one of which is a jar of the citrus marmalade above. I saw the recipe on a friend of our family's blog and thought it sounded really cool.
Take four citrus fruits. Marina went for two oranges, a grapefruit and a lemon while I used what was around, two lemons and two grape fruits. Put fruit, peel and all, in a pot and cover with water. Bring to a boil and let simmer for 30 minutes. Discard water, add fresh water and repeat the procedure and discard water once again. Add water a third time and this time you keep the water after the thirty minutes are up.
It's kind of fun seeing the fruit inflate and deflate in the process. Here they are cooling down on a plate while the saved water is taken care of.
There's a lot (!) of sugar in this recipe which preserves the fruit so there's no need to add any extra preservatives but I like to rinse my jars with Atamon, a couple of teaspoons in some warm water and the jars are good to go.
After the fruit has cooled you cut each into six wedges and then slice each wedge thinly.
This is how much citrusy water I started out with.
It was then brought to a boil and reduced until there was only half a liter (2 cups) left at which point I poured in the sugar, all 9 deciliters (3.8 cups) of it.
Then I added the cirtus to the mix and let that boil for quite a while...
... doing the "marmalade test" at regular intervals. You simply take a small spoon full of the marmalade and put it on a plate. After it has cooled off ju pull your finger through it. If the marmalade stays to the sides and doesn't run back in it's ready. The marmalade wasn't ready at this point so the simmering continued.
Here it's ready, see the marmalade walls aren't caving in anymore!
