I know some of you are into food and are interested in knowing what we eat. The thing is I’m not into food at all. I don’t enjoy cooking or even eating much. I’m one of those people who would rather snack all day instead of sitting down and having a proper meal and I don’t enjoy “a meal out” much because I think it’s a waste of time and money that I’d much rather use for something else such as a nice storage container.

But we have to eat. And I have to cook. So recently I started collecting simple recipes from magazines and online and my friend Anne complied her “Single mom’s quick and easy recipes” for me. (Thank you sweetie!!!) And I’m proud to say that Wille is not yet suffering from malnutrition and that we’ve had proper meals every day of the week and they’re not just macaroni and fried sausage. Here are some of the things I’ve tried so far.
A very tasty fall soup from lovely fellow Swedish blogger Weronica’s blog. And hey, I even baked Foccacia!
Sausage stroganoff. This was the one dish my dad could cook. It took him all day on the rare occasions that he did make it but it tasted great. The secret is tiny pieces of pickled cucumber.
Monster batch of hamburgers made from scratch by yours truly. Perfect for the freezer and to take out just as many as we need at a time.
I’ve also made my own pesto which Wille really enjoyed on spaghetti with salmon. I tried Anne’s lamb-zucchini-goat-cheese-lasagna which tasted great but came out a little dry on the edges because the dish was too large. And I keep remaking the sausage soup my friend Sanna taught me. All in all not too shabby an attempt at being the cook around here. If I do say so myself. I don’t think I’ll ever become a foodie but at least I’m cooking.
Oh, the top photo is of a standard weekend lunch on the go. Noodle soup and a wrap on the side. Super quick and easy and it’s good! My kind of food.
