I’ve been cutting carbs for a while and found this low carb granola recipe in a book at the library. It’s delicious so I thought I’d share.
- 3dl (1 1/4 cup) Chopped brazil nuts
- 1 dl (1/2 cup) Pumpkin seeds
- 3 tbsp. Sesame seeds
- 3 tbsp. Coconut flakes
- 1/2 dl (1/4 cup) Coconut fat
- 3 dl (1 1/4 cup) Almond flour
- 1 tbsp. Cinnamon
- 1 pinch of salt
- 3 tbsp. Honey or a sprinkle of Stevia
Roast the brazil nuts, the pumpkin and sesame seeds and coconut flakes in a hot pan for a few minutes. Make sure you stir all the time so it doesn’t burn. Transfer to a plate.
Wipe the pan with a paper towel. Heat up the coconut fat and add the nut mixture together with the almond flour. Add the cinnamon and salt. Stir.
Add the honey or the Stevia (I use honey) and fry at medium heat for a few minutes.
Transfer to a plate to cool. Keep the granola in an air tight jar.
Delish!

This sounds really interesting, I'm going to try it, though I abhor brazil nuts... maybe almonds or cashews? I'm going to give it a go. How do you eat it -- with milk? Mixed into yogurt? Thanks for sharing! (It's interesting, and quite a change, to see a recipe!)

If you want to keep it low carb you should stick to Brazil nuts or maybe walnuts (but they tend to be a bit bitter). Almonds and cashews have more carbs unfortunately.

The flour is not as coarse as ground almonds but I'm sure you can use that!

Sorry, forgot you had two questions. I tend to eat it up fairly quickly but it lasts at least a couple of weeks if the jar's air tight.

hum.... course it's delicious! Brazil nuts rocks! (oops...)
I prefer chopped almond intead of flour, but I'm sure it'´s realy very good.
And a lot of fibers and good oil. Try no sugar, no honey, no nothing for sweet but some Sun-made seedless risins.

Thanks for this recipe! I have to eat strictly low-carb (LGIHF) because of my insulin-resistance/carb intolerance and I will add this to my collection. I actually make pancakes with a similar recipe - keep everything on your list -- just change to 1 cup of coconut flakes and 1 cup of almond flour and add 6 eggs, a teaspoon of baking soda and one of baking powder. Fry them up in butter or coconut oil. Delicious topped with blueberries! Oh, and if you hate Brazil nuts, you can stay LC and use macadamia nuts.

Jag har sett den på olika sidor ett tag och undrat om man skulle prova den och nu när jag såg den på din sida googlade jag och kom till flera länkar och forum och trådar som varnade för den.
